Apple Crumble

Crumble Topping:

1 cup whole wheat flour
1 ¾ cups oatmeal
¾ cups light brown sugar
1 ½ teaspoons cinnamon
½ teaspoon salt
½ teaspoon vanilla
¾ cup plus 2 Tablespoons butter

Apples:
1 teaspoon vanilla
5 oz spiced apple cider
1/3 cup granulated sugar
2 teaspoons corn starch
1/8 teaspoon salt
3 ½ lbs apples, peeled, cored and cut into eighths

Pam spray

For crumble topping:
Combine flour, oats, brown sugar, cinnamon and salt in a medium bowl. Melt butter, add to mixture with ½ teaspoon vanilla.  Stir with fork, set aside

For Apples:
Combine 1 teaspoon vanilla, apple cider, granulated sugar, cornstarch and salt.  Add apples, tossing to coat.  Spray a 13 x 9 pan with Pam.  Spoon apple mixture into the prepared pan.  Cover apples with crumb topping.  Cover pan with foil, tenting foil so that it doesn’t touch the topping.  Bake at 375 degrees for 30 minutes, remove foil and bake 30 minutes more or until brown and bubbly.
