Agua de Jamaica
Quantity: 3 large glasses

Ingredients:

½ cup Jamaica dry flower (hibiscus)
½ cup sugar
2 cups water
Ice

Directions:

1.    In one cup of water, boil the flower with sugar 10-15 minutes.
2.    Cool slightly; strain the mixture through a strainer into a pitcher, removing the flowers.
3.    Add ice and 1 cup of water.

Add more sugar as needed and add water as needed.  Ice will melt and cool.

Serve a small portion, over ice, topped with seltzer.
